Thanks to Chef Drew Swanson, regional chef at Wolfgang Puck Catering Dallas, for answering this month’s reader question:

“We’d love to try something different for our upcoming nuptials. What are some of the latest trends in catering?”

Twists on tradition: A seated dinner is still popular, but a livelier cadence I’d like to see more couples move toward is a cocktail hour with passed appetizers, followed by one seated course. Then, a dessert that gets people up and out of their chairs. Creating a walking course-change keeps guests engaged and excited about what’s next.

Food stations: Giving guests a few different cuisine options is also a trend we’re seeing. If the bride wants BBQ sliders and the groom wants a ramen bar? Have both. Allow guests to create their own bowl of ramen or pick their favorite toppings for tacos. In addition to giving guests more bites to try, it serves as a great ice breaker, allowing people to chat in line.

Meaningful menu: Incorporating personal touches from the couple is a vital part of any wedding menu. Serving an appetizer inspired by a special trip the couple took, global cuisine as a nod to family heritage or even a family recipe that we can replicate. We’ve even created a “man cave” area with food and craft beer selected by the groom. These personal touches take a wedding from traditional to distinctive.

Chef collaboration using locally sourced ingredients: This is a trend that’s gaining momentum. Seasonal, local ingredients have always been at the heart of Wolfgang Puck Catering, and now we’re partnering with other chefs to create events that deliver local flavors to our guests for a myriad of occasions. It’s a great way for out of town guests to experience cuisine made with fresh, locally sourced items.

Food where you are: Couples are asking more and more for Wolfgang Puck Catering to bring our cuisine to their special location, be it the scene of their first date, where they got engaged, or somewhere completely random and fun. We can cater almost anywhere and having an event someplace unexpected personalizes a couple’s special event even more.
