Choosing Between Buttercream and Fondant

In the battle of buttercream versus fondant, which one wins? Sugar Bee Sweets Bakery founder Heidi Allison helps us break it down.

“The biggest difference in fondant versus buttercream is texture—this is true both in taste and how it looks on your cake,” says Heidi. “You can use fondant to make satin and fabric-like textures, and although you can do a lot with buttercream, it does have its limits.” When it comes to choosing which icing to use, Heidi doesn’t play favorites. “We do not recommend one over the other,” she says. “We start with the couple’s vision for their design and then go from there on what medium should be used.”
